Ice Cream Sandwiches at Home, even better!

Make your favorite cookie recipe, add a huge scoop of ice-cream between 2 cookies. Wrap in parchment paper, and freeze! My favorite combo is oatmeal cookies...no cinnamon with Blue Bell chocolate chip ice-cream OR chocolate chip cookies with Blue Bell chocolate marshmallow ice-cream. If you are entertaining, maybe have an make your own ice-cream sandwich bar with cookie and ice-cream choices. FUN!
